This recipe is from my mother-in-law. When I first heard about it, I didn't think I'd like it at all, but it's my favorite relish. It's similar to many of the other sauerkraut salad recipes, but is just a bit lighter, I think. Ingredients:
2 1/2 cups sauerkraut |
1 1/4 cups white sugar |
1 teaspoon salt |
1 green pepper, diced |
1 (4 ounce) can pimientos |
1 cup celery, diced |
1 onion, chopped |
1/4 cup water |
1/2 cup red wine vinegar |
1/2 cup salad oil |
Directions:
1. Mix all together and refrigerate at least overnight. 2. Great on hot dogs or almost anything - or nothing. 3. This looks very festive - great for Christmas time. |
