Modified from a recipe I found on - removed the potatoes to make it more Atkins compliant, changed the sausage to turkey kielbasa for low-fat. Ingredients:
2 lbs turkey kielbasa, cut into 1 inch pieces |
1 1/2 lbs sauerkraut, drained and rinsed |
2 granny smith apples, peeled, cored and sliced into rings |
1 medium onion, sliced into rings |
1 cup low-sodium low-fat chicken broth |
1/2 teaspoon caraway seed (optional) |
1/2 cup shredded low-fat swiss cheese |
Directions:
1. Place half the sauerkraut in a slow cooker, and top with the sausage. Cover with the remaining sauerkraut, apples, and onion. Pour chicken broth over all, and sprinkle with caraway seeds. 2. Cover, and cook on high 3-4 hours or low 6-8 hours. 3. Place each serving in a broiler-safe individual bowl or casserole, sprinkle with Swiss cheese and place under broiler for 1-2 minutes until cheese turns bubbly and brown. |
