Sauerkraut Chocolate Cake |

This is a recipe sitting in one of our family's recipe boxes. The name on the top is Jessie Penner. I've never met this lady, but she does make a wonderful sauerkraut cake! Ingredients:
2/3 cup butter |
1 1/2 cups white sugar |
3 large eggs |
1/2 cup cocoa |
1 cup water |
2 1/4 cups flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
2/3 cup drained sauerkraut |
1 teaspoon vanilla |
Directions:
1. Blend the butter and sugar together in a large bowl. 2. Add the eggs and mix again. 3. Sift the dry ingredients together, then add the water alternately with the sifted, dry ingredients to the butter and sugar mixture. 4. Stir in the sauerkraut and vanilla. 5. Put in two 8 x 8 inch pans and bake at 350 F for 30 minutes. |
