Don't knock this one, a wonderful salad to prepare when you have a lot of kraut or leftover kraut around to use! Ingredients:
16 oz saukerkraut, rinsed and drained. i use my fresh homemade but canned will do fine |
2 large sweet carrots grated |
1 small sweet onion finely chopped |
1/2 cup dark raisins |
2 tsp fresh orange zest |
2 tbs fresh orange juice |
1/2 cup sugar ( or splenda for sugar sub ) |
1/4 cup oil |
optional garnish: orange slices or wedges |
Directions:
1. Mix all together and combine well. 2. Chill well at least 4 hours 3. May drain excess liquid before using 4. Note: fresh sauerkraut has a wonderful crunchy taste, canned or packaged kinds makes for a much softer texture to the salad 5.
