A winning recipe from the 'Femina' magazine - a woman magazine very popular with Indian women. Ingredients:
1 cup flour |
1 cup milk |
1 egg |
1 pinch salt |
1 teaspoon butter |
2 teaspoons oil |
1 onion, chopped |
1/2 cup cabbage, finely chopped |
2 cups panir, grated |
salt |
fresh ground pepper |
1 kg tomato, blanched and pureed |
1 tablespoon oil |
1 onion, chopped |
1 teaspoon cornflour, dissolved in a little water |
2 tablespoons cream |
1 tablespoon sugar |
1/2 teaspoon red chili powder |
salt |
1/2 cup cheese, grated, for garnishing |
Directions:
1. Blend all the ingredients, except the butter, for the crepes. 2. Pour a little mixture into a buttered non-stick pan. 3. Tilt the pan to coat it evenly. 4. Cook the pancake on both sides. 5. Make six more pancakes. 6. To prepare filling: Heat oil. 7. Saute the onion for a minute. 8. Add cabbage and saute for another minute. 9. Remove from heat. 10. Add paneer, salt and pepper. 11. Mix well. 12. To prepare sauce: Heat oil. 13. Fry the onion well. 14. Add the remaining ingredients, except the cheese. 15. Simmer for 2 minutes till the sauce thickens. 16. To assemble: Spread a little sauce in a greased round baking dish, top with a crepe, spread a little sauce on it, followed by a little filling. 17. Repeat the layers, finishing with some sauce and topped with the grated cheese. 18. Bake, covered, on HIGH in a microwave for 5 minutes and uncovered for 2 minutes. 19. Serve hot. |
