Saucy Honey-Dijon Chicken |

Another recipe I got from the cookbook that my boyfriend bought. If the sauce is not thick enough, add more flour. Ingredients:
1 tablespoon olive oil |
1 teaspoon all-purpose flour |
1/4 teaspoon ground black pepper |
1/4 cup honey dijon mustard |
1 lb boneless skinless chicken breast half, cut into 1-inch chunks |
1 medium onion, chopped |
1 (14 1/2 ounce) can chicken broth (1 3/4 cup) |
Directions:
1. In 12-inch skillet, heat oil over med-high hear until very hot. In medium bowl, combine flour and pepper. Add chicken; toss to coat. 2. Place chicken in skillet and cook, stirring frequently until it just loses it's pink color throughout, 4-6 minute Transfer chicken to plate. 3. Reduce heat to medium. Add onion to skillet and cook, stirring occasionally, until browned, 3-4 minute Transfer to plate with chicken. 4. Increase heat to high. Add broth to skillet. Cook until sauce has thickened slightly, 6-8 minute With wire whisk, whisk in mustard. Return chicken and onion to skillet; heat through. |
