Very flavorful, easy and fast. A favorite of my families. A great way to use all the tomatoes that grow in the garden each summer. We like a lot of sauce. If you don't, simply reduce the amount of dressing and ckn broth used by equal amounts. Ingredients:
1 tablespoon olive oil |
4 -6 chicken breasts |
1 cup caesar salad dressing (kraft, creamy variety) |
1 cup chicken broth |
1 teaspoon dried basil (or 1 tbs fresh) |
3 small tomatoes, chopped (seeded if desired) |
2 tablespoons bacon bits |
1 1/2 cups uncooked rice |
1 tablespoon water |
1 tablespoon cornstarch |
Directions:
1. 1. Heat olive oil in a large skillet over med-high heat. Cook chicken breasts for about 5 minutes on each side. They should be slightly browned. 2. 2. Mix together dressing and chicken broth and pour over chicken. Add Basil. Bring this to a simmer and cook for about 3 minutes. 3. 3. Add tomatoes and bacon bits, cook for another 2 or 3 minutes. 4. 4. Mix water and cornstarch together and then add to chicken and sauce to thicken a little bit. 5. 5. Serve over hot rice. |
