SAUCY BRUSSELS SPROUTS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lyle Estate in Hurst, Texas in 1984.
Ingredients:
3 pounds brussels sprouts
1/4 cup butter
2 white onions chopped
1/4 cup flour
2 cups warm milk
1-1/2 cups shredded white cheddar cheese
3/4 teaspoon ground nutmeg
1 teaspoon salt
2 teaspoons freshly ground black pepper
Directions:
1. Trim sprouts and cut x in base of each.
2. In large pan of boiling water cook sprouts 10 minutes.
3. Drain and chill under cold water and press out excess water with towel.
4. Cut in half and place in shallow greased casserole dish.
5. Melt butter in saucepan over medium heat and cook onions stirring often for 10 minutes.
6. Stir in flour and cook stirring constantly 1 minute.
7. Add milk and cook stirring 5 minutes or until thickened.
8. Remove from heat and stir in half of the cheese, nutmeg, salt and pepper.
9. Pour over sprouts then cover and bake at 375 for 40 minutes.
10. Sprinkle with remaining cheese and broil uncovered for 2 minutes.
