Saucy Boiled Potatoes With Peppers |

Boiled potatoes in a delicious chicken broth gravy with peppers. I prefer to serve this with fried pork chops. Ingredients:
4 large potatoes, cut in 2 inch cubes |
4 baby red peppers |
3 cups chicken broth |
2 teaspoons garlic powder |
1 teaspoon onion powder |
1 bay leaf |
2 teaspoons cornstarch |
Directions:
1. Peel and cut the potatoes into roughly 2 inch cubes or use baby potatoes instead. 2. Cut the peppers into small 1/2 inch pieces discarding the seeds. 3. Combine all ingredients except the corn starch into a medium sauce pan and boil for about 10 minutes or until potatoes and peppers are tender. 4. Mix corn starch into a small amount of water to dissolve it and then stir it into the rest of the ingredients in the sauce pan and cook until it thickens into a nice gravy. |
