Good quality all-beef wieners or cubed salt pork can be added to the slow cooker for a more carnivorous take. However this recipe is hearty in it’s own right. Ingredients:
3 (19 ounce) cans navy beans, drained and rinsed |
1 onion, peeled and chopped |
3 garlic cloves, minced |
2 stalks celery, diced |
1 carrot, diced |
1 1/2 cups ketchup |
1/2 cup tomato juice (i used v8) |
1/4 cup packed brown sugar (i used dark brown sugar) |
1/4 cup apple cider vinegar |
1 1/2 teaspoons soy sauce |
1 teaspoon mustard powder |
1/4 teaspoon fresh ground black pepper |
2 bay leaves |
Directions:
1. Combine all ingredients in crock-pot. Cover and cook on Low until beans are bubbling and have thickened, about 6 hours. Discard bay leaves before serving. |
