This is good over vegetables and/or fish. Ingredients:
3 tablespoons butter |
4 tablespoons flour |
2 cups water |
3 egg yolks |
1/3 cup milk |
1 teaspoon lemon juice |
salt and pepper |
Directions:
1. Melt the butter in the saucepan and add flour, making a roux. Cook for 1-2 minutes then add the water. Bring to a boil and cook for 5 more minutes. 2. Beat the egg yolks and the milk. Combine with the first mixture, beating constantly with a whisk. Season to taste. 3. Strain the sauce through a very fine sieve or several layers of cheesecloth. Add lemon juice just before serving. |
