A unique one dish meal with eggs. We love it! Can be served for brunch, lunch, or dinner! We usually have it for dinner. Ingredients:
1 lb lean ground sirloin |
1 large onion finely chopped |
1 t worcestershire |
1/2 lb fresh mushrooms |
1 small can ripe olives, sliced and drained |
1 lb fresh spinach, washed, trimmed and chopped |
salt and pepper to taste |
2 large eggs, beaten |
1 ripe, med. tomato chopped |
sour cream |
shredded swiss cheese |
Directions:
1. Saute beef and onion in skillet until beef is brown and onions are tender 2. Add worcestershire, salt and pepper while browning 3. Add mushrooms and ripe olives, saute until mushrooms are tender 4. Add spinach, and another dash of salt and pepper; saute lightly, turning constanty with a fork (you will need to drain at this point. I usually leave just a little liquid to soak down into the bread). 5. Add well beaten eggs and continue turning with fork until eggs are set and evenly distributed throught the mixture 6. Serve as a one dish meal with plenty of crusty Frenc or Italian bread 7. Top each serving with chopped tomatoes, shredded cheese, and sour cream |
