Improvise a double boiler to make the icing by placing a metal bowl on top of a saucepan with boiling water. The bowl will be hot, so make sure you use hot pads. Water should not touch the bottom of the bowl, and be careful that no water splashes into the icing. Ingredients:
2 large egg whites |
1 cup sugar |
1/4 cup water |
3 tablespoons light corn syrup |
1/4 teaspoon cream of tartar |
1/8 teaspoon salt |
1 teaspoon vanilla extract |
Directions:
1. Combine first 6 ingredients in top of a large double boiler; beat at low speed with a handheld electric mixer until blended. Place over boiling water, beating at high speed 7 minutes; remove from heat. Add vanilla, and beat to spreading consistency. Spread immediately over cooled cake. |
