Keep it simple by preparing just about everything ahead of time. Ingredients:
3 small, ripe avocados, halved and pitted |
2/3 cup onion, chopped |
2/3 cup packed fresh cilantro, chopped |
1/3 cup fresh lime juice |
2 tablespoons canned chipotle peppers in adobo sauce, seeded and finely chopped, plus 1 tbsp. adobo sauce |
1/2 teaspoon ground cumin |
1/2 teaspoon salt |
Directions:
1. Scoop avocado flesh into bowl and mash with fork. 2. Stir in remaining ingredients. |
