This makes a great breakfast. Besides omelets, this is my favorite egg breakfast. We have also made it for dinner. Ingredients:
cooking spray |
1 (10 ounce) package spinach, frozen, chopped, thawed and well-drained |
4 eggs |
1/4 cup chunky salsa |
1/4 cup shredded monterey jack cheese |
sour cream (optional) |
additional salsa (optional) |
Directions:
1. Preheat oven to 325°F 2. Evenly coat 4 (6 oz.) custard cups with cooking spray. 3. Press about 1/4 cup spinach into each cup. 4. With back of spoon, make an indentation in center of spinach. 5. Break and slip an egg into each indentation. 6. Top each with 1 tablespoon salsa and 1 tablespoon cheese. 7. Bake until whites are completely set and yolks begin to thicken but are not hard, about 20 to 25 minutes. 8. Top with sour cream and/or additional salsa, if desired. |
