Crispy Smelts and terrific salsa make a tasty and different appetizer for a fish dinner. Ingredients:
3 tablespoons oil, divided |
2 pounds smelt, pan-dressed |
1 small onion, chopped |
1 clove garlic, minced |
1 medium tomato, chopped |
1/2 green, red, or yellow pepper, chopped |
1 can (15oz) black beans, drain and rinse |
salt & pepper to taste |
Directions:
1. Brush 2 tablespoons oil on fish and grilling basket. 2. Cook fish over hot coals for 10 minutes per inch of thickness or until fish is flaky . 3. - 4. as an alternative: add fish to a skillet with hot oil and fry. 5. - 6. For Salsa, heat remaining oil in large skillet over medium heat. 7. Add onion, garlic, tomato and bell pepper and sauté for 10 minutes. 8. Add remaining ingredients; cover, reduce heat and simmer for 5 minutes. 9. Top smelt with salsa mixture. 10. - |
