SASSY MOLASSES SWEET POTATO COOKIES This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Houston Estate in Crandall, Texas in 1991. Ingredients:
1/2 cup butter |
1/4 cup granulated sugar |
1 egg |
1/2 cup molasses |
1 cup grated raw sweet potato |
1 teaspoon grated orange rind |
2 cups sifted all purpose flour |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon ginger |
1/4 cup buttermilk |
Directions:
1. Cream together butter and sugar then add egg and beat thoroughly. 2. Add molasses, sweet potato and orange rind then sift together rest of dry ingredients. 3. Add alternately with milk to sweet potato mixture. 4. Mix well and drop from teaspoon onto greased baking sheet then bake at 375 for 15 minutes. |
