It's always fun to drive down back roads to find the bushes! They can easily be replaced by blueberries in this recipe! The city of Saskatoon, in my home province of Saskatchewan, was named for this plant! Ingredients:
4 cups saskatoon's or blueberries |
1 cup sugar |
2 tbls. minute tapioca or flour |
dash of salt |
1 tbls. lemon juice |
pastry |
Directions:
1. Mix all the ingredients together and fill pie shell. 2. Dot with 1 tbls. of butter and cover with pastry. 3. Poke holes in top using fork and brush with lightly beaten egg white. 4. Sprinkle with sugar. 5. Bake at 400 degrees for 10 minutes then reduce heat to 350 and bake about 30 minutes more. 6. Serve warm with some vanilla ice cream and enjoy! |
