From the Spanish Table restaruant in Berkely California for this tasty appetizeresp for sardine and Spanish food lovers This uses fresh sardines ( not canned ) and the grape leaves serve as a wrapper to prevent drying ut of the fish when being grilled
Ingredients:
8 whole fresh sardines( not canned )
1/4 cup sea salt or less if desired
4 bay leaves, fresh or dried
8 grape leaves from a jar
2 frssh lemons cut into wedges
Directions:
1. Perpare the grill
2. Remove gills, scales and innards from sardines, leaving head and tails on
3. Sprinkle salt inside and out of sardines
4. Place half a bay leave in cavity of each sardine
5. Roll each sardine in a grape leaf leaving head and tail partly exposed
6. Grill wrapped fish about 5 mins on each side
7. Unwrap the cooked sardines , plate them, squeeze on a little fresh lemon, eat the fish discarding the bones and grape leaf wrapper
