A lovely Spanish idea. If fresh sardines are unavailable, smelt would be an alternative. Ingredients:
1/2 cup extra virgin olive oil |
self rising flour |
3/4 lb fresh sardine |
salt (sea salt is recommended) |
lemon wedge (to garnish) |
Directions:
1. Heat oil in skillet. 2. Toss sardines in flour. 3. Place in pan and cook until golden brown and cooked through. 4. Remove from pan, drain, and sprinkle with salt. 5. Serve with lemon wedges. |
