Sarasota's Spicy Spinach and Tomato Saute |

This is such a quick easy dish. Sauteed in one pan and tossed all together, this dish gets a little kick from red pepper flakes. Toss some crumbled feta in, and this is a wonderful dish. I have also added in black olives many times for even another taste. I love to use the yellow pear tomatoes in this, but I know in many places they are difficult to find. Local farmers markets and Whole Foods or a similar grocery store often carries them. Ingredients:
1 pint tomato (25-30 whole grape tomatoes) |
1 (7 ounce) bag baby spinach |
1 medium onion, cut in quarters and thin sliced |
1/2-1 cup crumbled feta (depends on your taste) |
2 teaspoons minced garlic |
1 tablespoon balsamic vinegar |
1 1/2 tablespoons olive oil |
1 pinch red pepper flakes |
salt |
pepper |
Directions:
1. Onions and Garlic - In a large saute pan, add the olive oil and bring to medium heat. Add in the garlic and onions and cook 2-3 minutes just soften them up. 2. Tomatoes - Add in the tomatoes and cook until they become soft and they are just starting to pop. Don't let them get too over done. 3. Spinach - Add in the spinach and stir until slightly wilted (just a minute or two), then add in the balsamic vinegar, salt and pepper. Toss to combine. 4. Serve - Just add to your serving bowl and add the feta cheese just to combine and enjoy! |
