Sarasota's Grilled Gorgonzola Sammie Delites

So simple, so easy and quick and so good with a bowl of tomato soup for a week night dinner. I also serve these for BBQ's and potlucks for a quick appetizer. You can easily make these using small baguettes for a nice snack mid day and they always go over well for Monday Night Football which is what I am making tomorrow. A couple of important notes to this sandwich. (1) Good Italian bread (I like Ciabatta), (2) Good fresh tomatoes, (3) Fresh basil, and (4) Gorgonzola (NOT Bleu, to me the bleu is just too strong for this sandwich)
Ingredients:
1 cup gorgonzola
6 tablespoons butter (2 for the cheese spread, 4 for the ciabatta rolls)
1 small onion, diced fine
1 loaf ciabatta (cut lengthwise and then in 4 pieces)
3 large tomatoes (cut in thick slices)
16 basil leaves
salt
pepper
Directions:
1. Cheese - Just mix the butter (2 tablespoons), bleu cheese crumbles and onion and let it rest - room temp right before you use it.
2. Sandwich - Simply spread the bleu cheese butter on the inside slice of the ciabatta bread. Top with 2-3 tomato slices, salt and pepper and fresh basil leaves. Top with the second ciabatta slice.
3. Bread - I melt the remaining 4 tablespoons of butter and brush on the top and bottom of the sandwich and then grill. Now this can be done outside, an inside grill pan which is my method or you can use a pancake grilled, panini press or just plain saute pan. Use whatever you have. If possible, I like to press mine down a bit as it grills. Honestly, I just use my cast iron pan, but use anything you have. You just want it to flatten a little. And don't press it hard - there are tomatoes in there. Just a little weight is all it needs. It's just grilled cheese. It takes 4-5 minutes per side on medium heat.
4. Serve - I love to serve mine with tomato soup or potato soup. But this is a great sandwich, and the fresh ingredients and good bread really is what makes this stand out.
