A very easy quick dinner. And yes ... I don't always use soup in my recipes, but this is from the bottom of my recipe drawer and I had it marked ,,, Excellent. So I gave it to a friend and they absolutely loved it, so I thought I would pass it on. Easy and quick, a bit healthier using ground turkey and I like to use a good hearty wheat roll, but you can use any good bakery roll. Just don't get those tiny little prepackaged ones from the bread aisle. They just don't hold up to this sauce. Serve with fries, potato salad, coleslaw or just a crisp green salad. Ingredients:
1 lb ground turkey |
1 cup salsa (i use medium or hot, but use any heat level you like) |
1 (11 ounce) can campbell's tomato soup |
1 teaspoon cumin |
1 cup monterey jack pepper cheese, grated |
1 medium onion, very thin sliced |
1 teaspoon olive oil |
Directions:
1. Turkey - In a medium sauce pan, add the olive oil and bring to medium high heat. Add the turkey and cook breaking it up as you go until it is no longer pink. Add the soup, salsa and cook on medium to medium low, simmering, and let the liquid reduce slightly. About 10-15 minutes. 2. Onions - Just slice and set to the side, break up the slices slightly. 3. Rolls - Toast the rolls either on a grill, under the broiler or in the oven, whatever works best for you. 4. Sandwich - On the bottom roll, add the onion slices, then the sloppy joe meat, then cheese and the top roll. 5. ENJOY! A great sloppy, easy to make sandwich. Perfect for a weeknight. |
