Sarasota's 1970's Parmesan Puffs Updated

This is a old classic which my Mom and Grandma used to make. I still enjoy them, but have updated them a bit. They are just nice little bite size cheesy nibbles. Easy and quick.
Ingredients:
1/2 cup mayonnaise (no low fat, no miracle whip)
1/3 cup parmesan cheese, grated (the real stuff)
8 -9 slices pumpernickel bread
3 shallots, chopped very fine
1 pinch ground black pepper
1/2 teaspoon paprika
2 chives, very fine chopped (optional)
Directions:
1. Cheese Mix - Simply mix the mayo, parmesan and pepper in a small bowl.
2. Bread - With a round 1 cookie cutter, cut out circles of the bread and place on a cookie sheet. Top with a hearty spread of the parmesan mix.
3. Bake - Broil until golden brown and puffed up. The time will depend on your oven. I broil on the second shelf down. Mine take about 5-6 minutes. Top with shallots and a light sprinkle of paprika. Optional to sprinkle on a few chives. ENJOY!
