I had some leftover steamed rice, and I'm trying to clear my freezers, so I threw this together for dinner. It was so quick, easy, and yummy!
Ingredients:
3 tablespoons light olive oil
4 eggs, whisked
1 cup diced bacon
250 g frozen stir fry vegetables
2 cups rice, steamed
4 tablespoons soy sauce
Directions:
1. Heat the oil in a pan, pour eggs in, and cook until set. Remove from the pan, and chop into pieces.
2. Add bacon and vegetables to pan, and stir-fry for about 4-5 minutes.
3. Add eggs, rice, and soy sauce, and stir fry until everything is heated through and well combined.
