Sara's Super Quick Fried Rice |

I had some leftover steamed rice, and I'm trying to clear my freezers, so I threw this together for dinner. It was so quick, easy, and yummy! Ingredients:
3 tablespoons light olive oil |
4 eggs, whisked |
1 cup diced bacon |
250 g frozen stir fry vegetables |
2 cups rice, steamed |
4 tablespoons soy sauce |
Directions:
1. Heat the oil in a pan, pour eggs in, and cook until set. Remove from the pan, and chop into pieces. 2. Add bacon and vegetables to pan, and stir-fry for about 4-5 minutes. 3. Add eggs, rice, and soy sauce, and stir fry until everything is heated through and well combined. |
