This vegan chocolate chip oatmeal cookie eats more like a breakfast food than a cookie. If you are looking for a sweet desert cookie for kids, this recipe might not work. However, if you are trying to eat healthy, preserve the environment, and indulge in a little yumminess, then this is an excellent cookie to bake! (I personally like the cookies chilled.) I thank my friend, Sarah F., for giving me this fabulous recipe. NOTE: For the ease of posting, I listed an egg in the ingredients. Egg Replacer works perfectly well in this recipe and it is usually how I make. If you live near Trader Joe's, their orange flavored cranberries are perfect for this recipe. Also, you can substitute currants or dried berries for the raisins. Ingredients:
1 1/2 cups whole wheat flour |
1/2 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon salt |
1 egg substitute (such as egg replacer, etc.) |
1 cup sugar (turbinado) |
1/2 cup applesauce |
1 tablespoon maple syrup |
1/4 cup soymilk |
1 3/4 cups rolled oats |
1/2 cup raisins |
1/2 cup dried cranberries |
3/4 cup semi-sweet chocolate chips |
Directions:
1. Preheat your oven to 350 degrees. 2. Mix all of the ingredients together. With wet-hands (or a moistened cookie scoop) put heaping tablespoons of batter on a slightly greased cookie sheet. Bake for 10-12 minutes. They will appear very soft after baking, but they will harden after they cool. Transfer the cookies to a plate after 15 minutes of cooling. |
