Easy rice pudding recipe, but delicious! Takes about 15 minutes. I used only 1/2 the nutmeg called for in the recipe. Ingredients:
1 cup instant white rice |
2 1/2 cups milk |
1/4 teaspoon salt |
1/4 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/2 cup sugar |
1/4 cup raisins |
2 eggs, lightly beaten |
1/2 teaspoon vanilla |
Directions:
1. In saucepan, combine 2 cups milk, salt, cinnamon, nutmeg, sugar, and raisins. 2. Bring to a rolling boil, stirring constantly. 3. Reduce heat: boil slowly for 10 minutes, stirring occasionally. 4. Mix eggs with the remaining 1/2 cup of milk, then slowly add to hot mixture, stirring vigorously with a fork. 5. Cook over medium heat until thickened. 6. Add vanilla. 7. Let cool 10 minutes before serving. |
