This is a recipe that I was given over ten years ago from my lactose-intolerant friend, Sarah. It's very easy and I've made variations of it using wholemeal flour, different dried fruit or chocolate chips. It's great with a little butter and a cup of tea. Ingredients:
1/2 cup white sugar |
1 teaspoon bicarbonate of soda |
1 1/2 cups self raising flour (or make it sr with baking powder) |
1 cup mixed dried fruit |
1 tablespoon butter (can substitute with margarine) |
1/2 cup boiling water |
Directions:
1. Mix sugar, fruit and bicarb in a mixing bowl. 2. Melt the butter in hot water and add to mix, stirring well. 3. Add the SR flour to the mix. 4. Bake in a loaf tin at 180 for 35 minutes or until a skewer comes out clean. |
