Saragli- Rolled Baklava

A different version of baklava. My mom used to roll it around a wooden dowel, scrunch it and then remove the dowel. It looked better made that way. You can just roll it by hand though.
Ingredients:
1/2 c up unsalted butter; melted
1 1/2 cups coarsely ground almonds; (7
-ounces)
1 1/2 cups coarsely ground walnuts; (7
-ounces)
1 tsb ground cinnamon
14 sheets phyllo dough (keep between damp towels so it doesn't dry out)
2 cups honey syrup; cool, see

Directions:
1. Place rack in center of oven, and heat oven to 325 degrees. Brush a
2. 9-by-9-inch pan with melted butter. Set aside.
3. Combine almonds, walnuts, and cinnamon in a medium bowl. Set aside.
4. Place one sheet of phyllo on a flat work surface. Brush with melted butter.
5. Fold the long sides in to form a 9 1/2-by-15-inch rectangle. Brush folded
6. edges with butter. Place a second piece of phyllo over first sheet, and
7. gather it like a curtain to fit inside rectangle. Brush with butter.
8. Sprinkle 3 tablespoons of the nut mixture over the bottom one-third of the
9. phyllo rectangle.
10. Fold phyllo over to cover nuts.
11. Brush folded phyllo with
12. butter.
13. Spread 1/4 cup nuts in a 1-inch-wide line parallel to, and about 1
14. inch from, the edge of pastry.
15. Fold over once to cover nuts.
16. Roll like a
17. cigar almost to the end.
18. Fold in ragged edges, and brush them with butter.
19. Finish rolling, and fold ends under.
20. Place seam-side down in prepared pan.
21. Brush with butter.
22. Repeat with remaining phyllo and filling, laying each
23. roll next to the other so they are touching.
24. Cut rolls crosswise into 21
25. pieces total (drag knife through a second time to assure a clean cut).
26. Transfer to oven, and bake until crust and nuts are evenly golden, 1 hour
27. to 1 hour and 15 minutes.
28. Remove pan from oven, and cool for 10 minutes.
29. In the mean time, in a saucepan, bring 1 cup sugar and 1/2 cup water to a boil til dissolved.
30. Take off of heat and add 1/2 cup honey. (Attiki brand if you can find it)
31. Pour cool Honey Syrup over pastry; it will come about three-quarters of the
32. way up the sides.
33. Let sit until most of the liquid is absorbed and nuts
34. are saturated, about 30 minutes.
