Santorini Feta & Spinach Pizza |

This is a great Greek pizza with wonderful flavors. This is enough for a 12 pizza. Please adjust the amounts for a larger crust. Ingredients:
1 pizza crust (homemade preferably or store bought) |
1/3 cup tomato sauce (homemade is best) |
4 ounces goat cheese |
8 ounces feta cheese |
1/3 cup mayonnaise (not low fat) |
3 garlic cloves |
1/4 cup kalamata olive (chopped) |
1/2 chili pepper (minced) |
1 teaspoon dried oregano |
1 small red onion (sliced into thin rings) |
1 cup baby spinach leaves |
1 cup mozzarella cheese (shredded) |
Directions:
1. Prebake pizza crust in a 400F oven for 5 minutes. 2. Spread tomato sauce over crust. 3. Mix together the goat cheese, feta, mayo, garlic, olives, chili pepper & oregano. 4. Spread this mixture over the tomato sauce. 5. Scatter on the red onions, followed by the spinach. 6. Sprinkle on the mozzarella. 7. Enjoy with a glass of Vino and pretend you are overlooking the blue waters of Greece. |
