Santina's Chunky Winter Pumpkin Soup |

A spicy pumpkin soup made the Italian way. Delicious on a cold winters' evening with a chunk of wholemeal bread. Ingredients:
500 grams pumpkin |
20 grams pasta |
1 tbs olive oil |
2 cloves garlic |
1 gram red chili |
1 pinch salt |
1 pinch black pepper |
Directions:
1. Saute the garlic and diced pumpkin in the Olive Oil until tender. 2. Add 1 litre water and simmer for +/- 60 minutes 3. Add a small crushed sundried red chili (Hot) with seeds 4. Add a pinch of sea salt to taste 5. Add parsley 6. Add Ditalini pasta for final 10 minutes simmering time 7. Serve with milled black pepper and wholemeal bread (optional) |
