You may want to tint the coconut to make the cookies even more colorful. Ingredients:
1 cup butter |
1 cup white sugar |
2 tablespoons milk |
2 1/2 cups sifted all-purpose flour |
1 cup candied cherries |
1 teaspoon vanilla extract |
1 cup chopped pecans |
1 cup shredded coconut |
Directions:
1. Cream butter and sugar in large bowl. Blend in milk and vanilla and add to creamed mixture. Blend in flour, pecans and cherries. 2. Shape mixture into three 7 inch rolls. Roll each in coconut; wrap rolls and chill overnight. 3. Preheat oven to 375 degrees F (190 degrees C). Slice each roll into 1/4 inch slices and bake 12 minutes on ungreased cookie sheets. |
