Super fast and yummy. Can also be cooked via crock pot on low with frozen meat and corn for 4-6 hours. Ingredients:
1 lb turkey strips (thin and about an inch long) or 1 lb chicken strips (thin and about an inch long) |
2 (8 ounce) cans corn |
2 (8 ounce) stewed tomatoes |
2 (8 ounce) black beans |
1 cup fat free sour cream |
2 cups instant brown rice |
1 teaspoon hot sauce |
1 tablespoon olive oil |
4 ounces water |
salt and pepper |
Directions:
1. Combine corn, tomatoes, beans (do not drain) and 1/2 can of water in pot and bring to boil. 2. Add rice, cook until tender. 3. Remove from heat. 4. Sauté turkey/chicken strips in oil and hot sauce (to taste). 5. Mix meat with corn, tomatoes, beans, and rice. 6. Add sour cream. 7. Salt and pepper to taste. |
