Substituting Mexican-seasoned burger-style crumbles for plain crumbles adds an extra kick to this one-dish meal.
Ingredients:
1 (12-ounce) package burger-style recipe crumbles
1 cup chopped onion (about 1)
1 cup chopped green bell pepper (about 1)
1 1/2 cups uncooked instant rice (such as uncle ben's 5-minute rice)
1 1/2 cups vegetable broth
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (14.5-ounce) can mexican-style stewed tomatoes, un-drained
3/4 cup (3 ounces) pre-shredded reduced-fat sharp cheddar cheese
Directions:
1. Combine first 3 ingredients in a large nonstick skillet; cook over medium-high heat until crumbles are browned and vegetables are tender.
2. Add rice and next 4 ingredients. Cover, reduce heat, and simmer 5 minutes or until rice is tender and liquid is absorbed. Sprinkle with cheese; serve immediately.
