A try at weight watchers frozen Santa Fe Rice and Beans Ingredients:
2 cups cooked white rice |
1 (15 ounce) can black beans, rinsed and drained |
1 cup frozen corn |
1 (14 1/2 ounce) can diced tomatoes |
1 cup salsa |
1 cup low-fat sour cream |
2 cups 2% mexican cheese blend, divided |
1 medium red onion |
1 bell pepper |
2 medium zucchini |
Directions:
1. Preheat oven to 350. 2. In a large bowl, all ingredients except 1 cup cheese. Season with salt and pepper to taste. 3. Transfer to a greased 9x13 pan. 4. Bake uncovered for 30 minutes. 5. Sprinkle with reserved cheese and bake until cheese melts. |
