Santa Fe Meat Loaf

Ingredients:
1 large egg, lightly beaten
3 tablespoons grated fresh onion
1 (10-ounce) can diced tomatoes with green chiles, un-drained
1 (1.1-ounce) package fiesta ranch-style dip mix (such as hidden valley)
1 (8.75-ounce) can whole-kernel corn, drained
1/2 teaspoon pepper
1 teaspoon worcestershire sauce
1 1/2 pounds ground sirloin
1/4 cup italian-seasoned breadcrumbs
cooking spray
Directions:
1. Preheat oven to 350°.
2. Combine first 7 ingredients in a large bowl; crumble beef over vegetable mixture. Add breadcrumbs, and stir until well blended.
3. Shape beef mixture into an 8 x 4-inch loaf on a broiler pan coated with cooking spray. Bake at 350° for 1 hour or until a thermometer registers 160°. Cool 5 minutes.
