A spicy take on a stand-alone egg salad. Makes a great breakfast without all the heaviness and calories! I sometimes have it as a side instead of chips with a sandwich, too. Ingredients:
2 hard-cooked eggs, chopped |
2 ounces low-fat cottage cheese |
2 tablespoons salsa |
salt and ground black pepper to taste |
Directions:
1. Stir eggs, cottage cheese, salsa, salt, and black pepper together in a bowl. Cover and refrigerate overnight before serving. |
