This dish is super delicious, super easy and a staple in our house. Ingredients:
vegetable oil cooking spray |
3/4 lb boneless skinless chicken breast, cut into strips (or left whole) |
1 (8 ounce) jar salsa |
1 (11 ounce) can of drained mexican-style corn (corn mixed with chopped red and green peppers) |
1 (15 ounce) can black beans, rinsed and drained |
4 cups cooked rice |
Directions:
1. Prepare Rice according to directions. 2. Spray large skillet with vegetable cooking spray and heat. 3. Add chicken breast meat and cook on medium heat until chicken is cooked through. 4. Stir in salsa, mexi-corn and black beans. 5. Cook until all ingredients are heated through. 6. Serve over cooked rice. |
