Santa Fe Chicken Pilaf Ingredients:
1 pkg. rice pilaf mix |
1 can (14.5 oz.) fat free chicken broth |
1 tsp. cumin |
1 cup seasoned diced tomatoes |
2 cups cooked chicken strips, cut in 1 inch chunks, heated |
1/2 cup fresh tomato, chopped |
1 can (8.75 oz.) whole kernel corn |
1 cup canned black beans, drained and rinsed |
Directions:
1. Prepare rice according to package directions (using chicken broth instead of water) and (Add cumin with the contents of spice sack included with rice) 2. Stir remaining 5 ingredients into rice mixture. 3. Top with cheddar cheese, if desired |
