Santa Fe Chicken Enchilada Bake |

Warm and delicious with a bite of the Southwest! Ingredients:
4 1/2 cups cubed chicken, rotisserie |
1 (28 ounce) can green enchilada sauce |
16 ounces sour cream |
9 corn tortillas, cut or torn into 1 inch pieces |
4 cups shredded cheese, pepper jack or 4 cups monterey jack cheese |
Directions:
1. Grease a 9 x 13 pan and preheat oven to 375 degrees. 2. Layer half of the chicken, enchilada sauce, sour cream, tortillas and cheese. 3. Repeat layers. 4. Cover and bake for 45 minutes. 5. Uncover and bake for another 5 minutes or until bubbly. |
