Stuff pita breads or top sandwiches with this mix. Canned tuna, leftover cooked chicken or crumbled blue cheese can be added. Ingredients:
1/4 cup low-fat mayonnaise |
1 tablespoon honey |
2 teaspoons lime juice |
1 teaspoon curry powder (or to taste) |
3 -4 hard-boiled eggs, peeled and chopped |
1 small tart apple, diced |
1 1/2 cups baby spinach, washed and finely chopped |
1/2 cup celery, finely diced |
1 cup artichoke, canned, drained and finely chopped |
1 red onion, chopped |
1/4 cup sun-dried tomato, finely chopped |
1/4 cup pine nuts, toasted |
salt (to taste) |
Directions:
1. Mix mayo, honey, lime juice and curry powder. 2. Add all the other ingredients and gently mix. 3. Serve with favorite bread. |
