Ingredients:
1 lb calves liver
3 hard boiled eggs
1 1/2 cup minced onion
3 cloves garlic, pressed
1/2 cup minced sweet green pepper
4 tbsp butter
2 tbsp cajun seasoning
Directions:
1. Grill or broil the calves liver 3-4 minutes on each side
2. Saute the onion, garlic and green pepper until well softened
3. Minced the cooked liver and the hard boiled eggs and mix together well in a large bowl.
4. Add the cooked vegetables to the liver mixture and sprinkle the cajun seasoning on top - mix very, very well.
5. Use Pam to grease cups well and divide the mixture into the cups. Press the mixture down firmly in the cups.
6. Cover the cups with saran wrap and refridgerate over night.
7. Serve the chilled chopped liver with black bread or crackers as makes you happy.
