The sourdough really perks up this old favorite. My hubby and I tried it out recently and it was soooo yummy it would satisfy the sweet tooth fairy herself! Courtesy of Columbo Bread Co. Ingredients:
pudding |
12 slices colombo french bread- tear into small pieces |
1 cup moist raisins |
4 tbs. butter |
1/2 tsp cinnamon |
6 eggs - separate yolks & egg whites (hold eggs whites to use later) |
1 cup sugar |
1/3 tsp salt |
1 tsp vanilla |
topping: (use egg whites from above.) |
6 cups milk |
2/3 cup sugar |
1/2 tsp vanilla |
Directions:
1. 1. Preheat oven to 350° 2. Pudding: 3. 2. Place bread, raisins, and butter in a large 9 x 15 glass baking dish 4. 3. Sprinkle on cinnamon 5. 4. In a large bowl mix well the egg yolks, 1 cup of sugar, salt, 1 tsp vanilla, and milk 6. 5. Pour over bread 7. 6. Bake for 50 minutes, then let cool 8. Topping: (we decided it was already how we would like it without the added topping) But for those that want to go that extra mile… 9. 7. In a small bowl mix the egg whites, 2/3 cup of sugar, and 1/2 tsp vanilla until it peaks 10. 8. Spread over cooled mixture making peaks 11. 9. Bake for 10 to 15 minutes until golden brown |
