Typically an appetizer, Indian samosas are little dough pockets filled with a spicy combination of potatoes, onion, and meat or fish. Here we've used meatless crumbles and made them larger to serve as a main dish. Serve with a mixed greens salad. Ingredients:
1 1/2 cups frozen vegetarian meatless crumbles (such as morning star farms meal starters) |
3/4 cup country-style refrigerated mashed potatoes (such as simply potatoes) |
1/3 cup frozen petite peas |
indian spice blend mix |
1 (8-ounce) can refrigerated reduced-fat crescent rolls (such as pillsbury) |
cooking spray |
nonfat greek yogurt (optional) |
Directions:
1. Preheat oven to 375°. 2. Combine first 4 ingredients in a medium microwave-safe bowl. Cover with plastic wrap; vent. Microwave at HIGH 2 minutes or until thoroughly heated. 3. While filling heats, unroll dough on work surface. Press diagonal perforations together. Cut dough along remaining perforated lines to create 4 (6 1/2 x 3 1/2-inch) rectangles. Spoon filling evenly on half of each rectangle. Fold dough over filling, pressing with a fork to seal. Coat a baking sheet with cooking spray, and place samosas on pan; coat samosas with cooking spray. Bake at 375° for 12 minutes. Serve with Greek yogurt, if desired. |
