With homemade samosas this good, there's no need to leave your house.
Ingredients:
1 1/2 lbs boiling potatoes, peeled and boiled until tender
1/4 c very finely chopped sweet onion
1/2 fresh serrano chile, very finely chopped
1 1/2 tbsp very finely chopped fresh cilantro
1 tsp salt
1/2 tsp cayenne pepper
1/2 tsp garam masala
1/4 tsp cumin seeds
juice of 1/2 lemon or lime
1/4 c butter (optional)
1 lb package frozen puff pastry, thawed
1 egg, whisked
Directions:
1. Coarsely mash the potatoes with the onion, chile, cilantro, salt, spices, lemon or lime juice, and butter and mix well. Leave as lumpy as you'd like.
2. Lay the thawed sheets of puff pastry on a lightly floured work surface. Cut the sheets into thirds along the lines of the folds. Cut each third in half crosswise, which will leave you with 12 rectangles. Roll each rectangle out lightly to form a square. Cut each square in half diagonally, which will leave you with 24 triangles.
3. One at a time, brush around the edges of each triangle with the whisked egg. Spoon a generous tablespoon of filling in the center of each triangle. Grab two points of the triangle and pull upwards and seal edges together. Then pull the third point upwards and seal the seams. Fold the point at the top over. Your samosa will look a little bit like a doughy Peep.
4. Preheat oven to 400.
5. Arrange assembled samosas in a greased baking dish, spray lightly with olive or canola oil, and bake until crisp...about 20 minutes.
