A typical simple fish preparation from Samoa. Preparation time does not include time to prepare the grill. Ingredients:
3 lbs fish (use a fresh whole mild white fish, gutted, scaled and head removed) |
1 1/2 cups coconut milk |
1/2 onion, chopped |
1 teaspoon salt |
1 chili pepper, minced |
Directions:
1. Prepare the grill, preferably a charcoal grill. Grill the whole fish until it is cooked (the flesh flakes easily with a fork). 2. Meanwhile add the coconut milk, onion, salt and chile pepper in a bowl. 3. When the fish is cooked, pour the coconut milk mixture over the fish to thoroughly soak it. Cover and let stand for 5 minutes to absorb the milk mixture. 4. Serve with cooked rice. |
