Traditionally eaten at the celebration of Samhain, otherwise known as Halloween. This recipe comes from Danielle K. on RecipeZaar. Ingredients:
3 cups fresh mushrooms, sliced |
1 cup chopped onion |
3 tablespoons butter |
1/2 teaspoon salt |
1/3 teaspoon pepper |
1 cup white cooking wine |
1 1/2 cups heavy cream |
1 teaspoon chopped bay leaf |
1 teaspoon celery seed |
1 teaspoon dried thyme |
6 ounces fettuccine, cooked |
* as i am lactose-intolerant, i use rice milk or soy milk, adding several tablespoons of lactose-free creamer (unflavored) until i get the right consistency required. |
Directions:
1. Sauté the mushrooms and onions in the butter until tender. 2. Add the salt, pepper, and wine; simmer over low heat until the mixture is reduced by half, about 5 minutes. 3. Stir in the cream, bay leaf, celery seed, and thyme. 4. Bring to a low boil. 5. Pour over pasta. 6. Decorate the top of each dish with fresh sliced mushrooms. |
