Salvadorian Pupusas-fried Cheese Filled Pastries |

Popular Central American filled cheese or bean filled pastries . Once you taste these, you can't stop eating them! The recipe uses masa harina, a special dried cornmeal flour used in making tortillas, tamales, etc. Read more . 5 cups masa harina flour |
4 cups water, approximately |
1 large can refried beans |
3 cups soft white cheese ( like muenster cheese ) |
light vegetable oil or light olive oil |
Directions:
1. In a large mixing bowl, gradually stir water into masa harina until dough forms a ball that can be handled. 2. Into another bowl, empty the refried beans. 3. Place the grated cheese into a separate bowl. 4. Divide dough into about 25 pieces. 5. Roll each into a ball and flatten between the palms of your hands to about 1/2-inch thick. 6. Put a spoonful of beans and a small handful of cheese into the center of each pupusa. 7. Flatten again with the filling inside. 8. Heat a heavy, wide-bottomed or flat skillet until hot. 9. Brush with oil and cook pupusas on each side 4-5 minutes until a pale golden-brown. 10. The outside should be firm. 11. Variations 12. Pupusas de Queso: With a cheese filling. Use grated quesillo, queso fresco, farmer's cheese, mozzarella, Swiss cheese or a combination. Add some minced green chile if you like. 13. Pupusas de Chicharrones: With a filling of fried chopped pork and a little tomato sauce. 14. A reasonable facsimile can be made by grinding 1 cup of cooked bacon with a little bit of tomato sauce in a food processor. 15. Pupusas de Frijoles Refritos: With a refried bean filling. 16. Pupusas Revueltas: Use a mixture of chicharrones, cheese and refried beans. 17. Pupusas de Queso y Loroco: With a cheese and tropical vine flower filling. Loroco can be found in jars at many Latin markets. 18. Pupusas de Arroz: A variety of pupusa that uses rice flour instead of corn masa. 19. Cooked potatoes or finely minced, sautéed jalapeño peppers are also tasty fillings. 20. Try a mixture of different fillings. 21. Note: one may half the recipe if desired |
