Saltine-Lima Bean Microwave Casserole |

I'm a poor, rushed, college student, and this works pretty well for me on days when I need something cheap and fast. Doesn't hurt that it pretty much fills a requirement for each food group as well. I would imagine you can use other kinds of beans as well, I just happen to be one of the few people that like lima beans. Ingredients:
1 cup frozen lima beans |
2 tablespoons water |
1/2 cup crushed saltine crackers |
1/4 cup shredded mozzarella cheese |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Put lima beans, water, salt and pepper in a microwave-safe bowl. 2. Cover, leaving a vent, and microwave on high for 3 minutes. 3. Add cheese and saltines, stir up until cheese is melted. 4. Eat and run on out the door. |
