These are easy and very good, chewy but yet crunchy, these are one of my holiday cookie bars I make. Enjoy! Ingredients:

1 package yellow cake mix |
1/3 cup softened butter |
1 egg |
3 cups miniature marshmallows |
topping |
2/3 cup corn syrup |
1/4 cup butter |
2 tsp. vanilla |
12-oz package peanut butter chips (2 cups) |
2 cups crisp ric cereal |
2 cups salted peanuts |
Directions:
1. Heat oven to 350* 2. In a large bowl, combine all the base ingredients except the marshmallows at low speed till crumbly. 3. Press into the bottom of a greased 9X13 pan. 4. Bake 12-18 minutes till light golden brown. 5. Remve from oven and sprnkle with marshmallows. 6. Return to oven for 1-2 minutes until marshmallows just begin to puff. 7. Cool while making topping. 8. In a large saucepan, heat corn syrup, butter, vanilla, and chips until the chips are melted and mixture is smooth and creamy, stirring constantly. 9. Remove from heat, stir in nuts and rice cereal. 10. Immediately spoon over marshmallows and spread to cover. 11. Chill, cut into bars. 12. Store covered. Makes 36 bar cookies |
